Muffins with spiced apples


(for 10-12 muffins)
2 Biogurt Coconut Lemon
150 g Bio Drink Soya Natural
150 g type 1 flour
25 g raped coconut
80 g brown sugar
35 g seed oil
25 g coconut oil
6 g baking powder
1 pinch of salt
3 golden apples
1 lemon
1 teaspoon cinnamon
60 g maple syrup
100 g chopped walnuts ⁠

Peel and cut the apples. Season them with lemon juice, maple syrup and cinnamon. Cook them in a small pot over a low flame until soft and caramelised.
Blend about half of them and mix them again with the remaining ones. Leave to cool.
In a bowl, combine the flour, coconut rapé, baking powder, sugar and pinch of salt and mix with a whisk. Add the Biogurt Coconut Lemon, the Bio Drink Soya Natural and the oils, mixing well with a spatula. Fill half of the ramekins with the mixture.
Fill the muffins with 2 tablespoons of apple puree, pushing them lightly towards the bottom, and finish with a sprinkling of chopped walnuts. Bake at 170°C for about 15-18 minutes.
