Rosemary bavarois


(for 4 people)
250 g Bio Almond Drink
250 g Bio Rice Drink
65 g brown sugar
one small bunch of rosemary
orange and lemon zest
half a vanilla bean
2,5 g agar-agar
tangerine jam

Pour the drinks into a small pot then add the sugar and all the aromas. Simmer for 5 minutes then let it cool. Filter your mixture, melt in the agar-agar and place it back in the pot Boil for about 3 minutes. Now pour the mixture into the molds and let cool in the refrigerator for a few hours.
Finely mince a bit of rosemary and mix it together with the tangerine jam.
Transfer the bavarois from the molds onto the serving plates and cover with a spoonful of jam. Decorate each serving with a tuft of rosemary.
