Russian salad

Ingredients

(for 6 people)
120 g carrots
120 g fine peas
250 g potatoes
5 pickled gherkins
1 handful of green olives
1 handful of pickled capers
350/400 g of mayonnaise veg

For mayonnaise veg:
200 ml BioSoyaDrink Natural
200 ml organic corn oil
50 ml evo oil with a delicate flavor
1 tablespoon of lemon juice
1 teaspoon of apple vinegar
1 teaspoon of delicate mustard
1 teaspoon of turmeric to color
a pinch of salt

Preparation

 

Prepare the mayo by pouring Bio Soya Drink Natural into the mixer container.
Add the lemon, vinegar, mustard and turmeric and blend, adding the oil a little at a time until it thickens. If it does not thicken, add a little more oil, still blending until it is creamy in consistency. Taste and adjust salt and vinegar and/or lemon to taste. Thicken further in the fridge. Cut the carrots and potatoes into small cubes and boil them separately in a little lightly salted water. Blanch the peas for a few minutes. Mix the vegetables together, add the capers, olives and gherkins rinsed and cut into small pieces to cool. Season with mayonnaise, stir and leave in the fridge for a few hours or, even better, all night.
