Rice congee with strawberries and chocolate


1 cup of basmati rice
3 cups of Rice drink Plus
3 cups of water
50g of agave syrup
1/2 vanilla stick
1/2 teaspoon of cinnamon powder
1 pinch of salt
1/2 lemon juice
3-4 tablespoons of soya yoghurt
Dark chocolate chips to taste
Toasted sliced almonds to taste
250g di fresh strawberries

Combine the basmati rice in a saucepan together with the rice plus drink, water, agave syrup, vanilla, cinnamon and salt. Cook over a low heat, stirring frequently, until the rice is very soft and creamy. Remove from the heat and mix with the yoghurt and lemon juice when it’s still hot, then let everything cool down.

Blend half of the strawberries in a blender and cut the rest into 4 parts.

Pour a few tablespoons of rice congee into glass cups, pour in 2 tablespoons of strawberry coulis and then some more rice congee.
Finish with fresh strawberries, chocolate chips, almond fillets and a few mint leaves.
